Baby greens
1/8 cup pine nuts
2 oz. Parmesan flakes
Salt & pepper to taste
Fresh lemon juice
Directions:
Wash and prepare your greens and plate out into bowls. Add the pine nuts to a small saute pan and toast on the stove for 3-5 minutes over medium heat. Top each salad with a sprinkle of pine nuts and 1 oz. parmesan cheese. Finish with a squeeze of fresh lemon juice and salt & pepper to taste. You can easily add in some veggies to this salad - I think cherry tomatoes would be a great addition!Tip:
Make sure you keep an eye on the pine nuts! They can (and will) burn quickly if you aren't paying attention.
