Grapefruit Raspberry Salad

During these cold winter months I long for the days of fresh fruit and sunshine.  I normally don't like fruit salad, I always envision squishy over-ripe bananas.  I saw a simple fruit salad in Real Simple Magazine last month which inspired me to create the one below!  I used mostly fruit that is in season, and the pinks, reds and oranges together are so pretty - ESPECIALLY for Valentines day.  So whip up this easy concoction and serve it to your love with breakfast in bed (or in the car on the way to work, which is how I will be enjoying my Valentines day breakfast with my husband)

Servings: 2
Servings Size: about 1.5 cups
Points Plus: 0pp
Prep Time: 5 minutes
Cook Time: n/a
Level of Difficulty: Easy

Ingredients
1 grapefruit, peeled and cut into small peices
1 pt. raspberries
1 mango, peeled and cut into peices

Directions
This is a simple fruit salad!  Just chop, mix and enjoy!  The colors are very V-day'esk, so this recipe will help get you in the spirit!

Tip
When cutting a grapefruit, peel it and THEN cut it into chunks, instead of the other way around.  MUCH easier!

**PS:  I apologize for the horrible photo!  In a pinch, I had to take a photo of my camera screen with my phone and edit that!

Valentine M&M Cookies

Are you having a Valentine's day party? Or are you looking for a fun sweet treat for your husband, boyfriend or someone special??? Try this for the old stand-by recipe from Nestle Toll House and simply replace the chocolate chips with Valentine colored M&Ms!

Servings:  Recipe will make 5 dozen
Size:  1 cookie
Points Plus: 2pp
Level of Difficulty:  Easy
Prep Time: 10 minutes
Bake Time:  9-11 minutes per batch

Ingredient List:
2 ¼ cups flour
1 tsp. baking soda
1 tsp. salt
1 cup butter, softened
¾ cup sugar
¾ cup brown sugar, packed
1 tsp. vanilla
2 eggs
1 cup M&Ms (Valentine's package)
Directions:
Preheat the oven to 375°.  In a medium bowl, combine the flour, baking soda and salt until well mixed.  In a large bowl, cream butter, sugars and vanilla until creamy.  Add the eggs one at a time, making sure to beat thoroughly after each. Gradually add the flour mixture.  Fold the M&Ms in to the batter.  Drop heaping spoonfuls onto ungraded cookie sheets.  Bake for 9-11 minutes.  After removing from the oven, allow to cool for a minute or so on the cookie sheet before transferring to a wire cooling rack.
Tip:
I used all butter when I made these cookies and I have to admit my cookies turned out kind if flat. :( My mom and grandma's cookie baking tip was to always replace half the called for butter with crisco instead.  Try that trick next time you bake cookies!

Sriracha Roasted Cauliflower

Have you heard the rumors of a Sriracha shortage?  I went to a few different grocery stores last weekend and couldn't find it anywhere.  And as the lady in a household that just LOVES Sriracha I panicked!  I did! And then I went to another store and found it so everything was/is ok.  I also found a recipe for it, which I would love to try in the coming days. So if there is ever a Sriracha shortage again I won’t panic. You might think cauliflower coated in Sriracha and roasted to perfection would be super spicy and unbearable.  Well, the truth is, when you cook it the flavor gets pretty mild, the combo of other sauce ingredients are the perfect mix for this low point veggie side! This recipe is from my new favorite food blog, iamafoodblog!

Servings: 3
Serving Size: About 2 cups
Points Plus: 3pp
Prep Time: 10 minutes
Cook Time: 25 minutes
Level of Difficulty: Easy

Ingredients List
1 T olive oil
1 t sesame oil
2 t soy sauce
2 t rice wine vinegar
2 T Sriracha
1 head of cauliflower cut into small pieces
Chopped cilantro and lime wedges to serve

Instruction
Preheat the oven to 450°F.

Combine the first five ingredients in a large bowl. Add the cauliflower florets and toss to coat. Arrange the cauliflower on a lined baking sheet (don’t crowd them!) and roast for 20-25 minutes, turning once, until tender.

Enjoy hot with cilantro and lime.

Tip

Serve these right out of the oven so they maintain their crunch.  I ate some as leftovers the next night, and although they were delish, they were a little, well, not crunchy!

XOXO- Katie

Hawaiian Luau Party Skewers

This is a simple appetizer that comes together in a flash!  You will love this combo of ingredients... sweet pineapple paired with salty ham and a hint of dill from the Havarti cheese all together makes for a delicious little bite.

Servings: 10
Serving Size: 2 skewers
Points Plus: 4pp
Prep Time: 15 minutes
Cook Time: n/a
Ingredient List:
5 slices of deli ham, cut
10 oz. dill Havarti cheese
Fresh pineapplie, cut into 1-inch wedges
Toothpicks

Directions:
Dice the cheese into 1/2 oz. pieces.  Slice the deli ham into 4 pieces and fold each piece into a square so it stacks easily on the skewer.  Assemble each skewer by starting with a pineapple wedege, then a ham slice folded into a square, then topping off with a piece of Havarti.  Arrange on a serving platter and you're all set with an easy appetizer for your party guests!

A Hawaiian luau is such a fun themed party to throw!  If you are looking for more recipes to serve at this type of party check out a past favorite from foodlove for delicious (and slightly indulgent) Island Rum Cake!

French Dip Sandwiches

In my continued attempt to embrace my slow cooker this year, I decided to make a whole roast.  Because I don't like plain roast (jeeze I really am not as picky as I sound and have a good reason for it), I made the roast with the goal of making Skinnytaste's French Dip Sandwiches (with a few minor edits)! This recipe sure was easy, but really, who wakes up 12 hours before dinner time to get the roast in the crock!  I think mine could have cooked longer, to create a more juicy roast, but it was still really good.  And we have been enjoying the leftovers for a quick easy dinner!

Servings:  Varies
Serving Size: 1 sandwich, see below
Points Plus: 8pp
Prep Time: 10 minutes
Cook Time: 8-12 hours
Level of Difficulty: Easy

Directions
In a small bowl mix garlic, rosemary, thyme, salt and pepper. Rub the spice mixture onto all sides of the roast, then place in the slow cooker.
Remove the meat from the slow cooker to a cutting board and shred with a fork or slice with a knife. Strain the broth through a fine sieve then place in a gravy separator to remove any fat. Pour 1/4 cup broth into each small ramekin.
Remove the meat from the slow cooker to a cutting board and shred with a fork or slice with a knife. Strain the broth through a fine sieve then place in a gravy separator to remove any fat. Pour 1/4 cup broth into each small ramekin.

Ingredients
For The Beef
3 to 4 lb lean beef round roast, trimmed
1 T minced garlic, minced
1 t fresh rosemary (or 1 tsp dry), 1 T fresh thyme (or 1 tsp dry),
1 t kosher salt
5 cups of water
3 beef bouillon cubes
1 t Worcestershire sauce (I forgot to add this)
Fresh ground pepper
1 bay leaf
1/2 large onion, cut into chunks

For the Caramelized Onions (makes about 1 cup)
1/2 tablespoon extra-virgin olive oil
3 large onions, thinly sliced
1/2 tsp Kosher salt

For the Peppers (makes about 2 cups):
1 large red bell pepper, cored, seeded and sliced into strips

For the Sandwich
Sargento Reduced Fat Provolone or Mozzarella Slices

1 large green bell pepper, cored, seeded and sliced into strips

Whole wheat baguette or rolls, cut into 2 oz pieces

Pour the water into the side of the roast until it just cover the meat. Add beef cubes. If the water doesn't cover the roast you can add more and top with onions. Add the about 20 grinds on the old pepper mill and bay leaf to the water/broth. Cover and cook on low until the meat flakes apart easily with a fork, about 9 to 12 hours, depending on the size of your roast.  Mine cooked for about 8, but was flaky, so who knows how long it should have cooked for!

An hour before the meat is done, prepare the onions and peppers. In a large nonstick skillet heat the oil over medium heat. Add the onions and salt and cook until golden, stirring often, reducing heat as needed if the onions are burning or browning too quickly, about 30 to 35 minutes. The onions should turn golden and the flavor should be sweet. Transfer to a serving bowl, then add the peppers to the skillet and cook stirring often until soft, 8 to 10 minutes.

Preheat the oven to broil. Split the bread open and top with 2 ounces of beef. Top with onions, peppers and cheese and broil until the cheese melts. Place on a plate with broth for dipping.

Nutrition based on: 2 oz whole wheat baguette, 2 oz cooked beef round, 1/4 cup beef broth, 1 slice cheese, onions & peppers.

Tip

Caramelizing onions is hard to do (in my opinion) when not suing a ton of fat.  The key is to cook them on a very low temp, so they don’t burn.  It can be done people, it just takes some patience!

Pasta with Asparagus, Pancetta & Pine Nuts

I love pasta, especially the curly-cue cavatappi noodles!  They are like little corkscrews and they soak up the flavors of your pasta dish.  This is a really simple recipe that can quickly come together for any night of the week or you can serve it with fancy appetizers or desserts to make it for a more special occasion.  In fact, my husband and I made this on New Year's Eve this year!  Although higher in pp value, I think it’s a generous sized portion!
Servings:  4
Size:  1 ¾ cups pasta
Points Plus: 9pp
Level of Difficulty: Easy
Prep Time: 5 minutes
Cook Time:  20 minutes
Ingredient List:
8 oz. uncooked cvatappi pasta
1 lb. asparagus, trimmed and cut diagonally into 1 ½ inch pieces
1 tsp. minched garlic
3 Tbsp. pine nuts
2 oz. diced pancetta
2 Tbsp. fresh lemon juice
2 tsp. olive oil
½ tsp. kosher salt
¼ tsp. freshly ground black pepper
¼ cup flaked Parmesan cheese

Directions:
Cook the pasta according to the package directions; add the asparagus to the saucepan during the last 3 minutes of cooking to cook the veggies.  Drain and return to the pan. Stir in the minced garlic. While the pasta water is heating up, toast the pine nuts in a small pan until golden brown.  Set the toasted pine nuts aside in a small bowl.  Using the same small fry pan, cook up the diced pancetta until crispy.  In a small glass measuring cup, add the lemon juice, olive oil, salt and pepper and whisk until well combined.  Drizzle this mixture over the pasta and toss to evenly coat.  Serve in pasta bowls and sprinkle the toasted pine nuts, pancetta pieces and parmesan cheese on top.
Tip:
Instead of pan frying the pancetta you could also bake it (I think this will result in crisper pieces actually).  Get out a cook sheet and bake in a 475°oven for about 5 minutes or until crisp!

Roasted Carrots with Feta and Parsley

It is always great to try something new, right??  It is a really loooooong story, but I don't like cooked carrots.  Well, I guess I don't like them until now! Perhaps it is because in this recipe their taste is masked by the delicious taste of garlic and feta...kidding, kidding.  These carrots are really flavorful, and the smearable garlic and feta make them really fun to eat!

Servings: 4
Serving Size: 1 cup
Points Plus: 3pp
Prep time: 10 minutes
Cook time: 30 minutes
Level of Difficulty: Easy

Ingredients
4 cups of carrots, peeled and chopped into long chunks (like the picture)
1 head of garlic, with each glove removed and de-shelled
1 T olive oil
1/2 c. low fat feta
Salt + pepper to taste
1/2 cup parsley, finely chopped

Instructions
Pre-heat oven to 425 degrees.  Peel carrots and cut them into strips, about 3 inches long.  Place them in a bowl and toss with 1 T olive oil, garlic, and a pinch of salt and a pinch of pepper.  Bake them for 20 minutes. Remove them from the oven, mix in the feta, toss them around and bake them for 10 more minutes.  When they are done toss them with parsley and serve! When eating, smear the garlic and feta over the carrots.

Tip
It is important to let the carrots bake with the feta for the last 10 minutes.  This make the feta smearable, mmmmmmmmmm.
